For Jira Core (not service desk) and as CLOUD. I want to be able to determine how long something is in a particular status.
1 - REPORT ON how long an item is in a particular status - Such as "how long is / was" this bug in "NEEDS TRIAGE"
2 - What is the AVERAGE time something was in a status - such as How long on average is a BUG in "NEEDS TRIAGE"
3 - Set an alert or something - if something is in a status TOO LONG "HEY BOB - YOU NEED TO TAKE A LOOK AT THIS IT HAS BEEN IN NEEDS TRIAGE for 2 weeks
Plugs in / extension fine - but this is for JIRA CORE CLOUD

1-2. The add-on Time in status Jira Cloud by SaaSJet will fit you for checking status duration and avarage time in status for each issue.
It can help you to monitor the time your team members are spending on a request and how many times an issue has been in each status. (About other reports you can read at the documentation.)
You can view your data at the app as Pie, Bar or Area Charts.
Also, there is a possibility to export data as XLSX or CSV file.
3. To monitor issues which are too long in some status you can with add-on SLA Time and Report
