We want to be able to see the capacity of all the people in the team: something like a list of people (Like on the Activity Stream) but with all User Stories/tasks assigned to them - to see if they don't have too many issues assigned.
It should be a place where you can see all the tasks assigned to each person.
Do you know where we can get a plugin like this maybe? Or can we configure our Jira Software somehow to achieve this goal?

You can do this in different ways.
One way (no plugin needed) is that you build a filter and use that filter in a dasbboard gadget (eg. filter results).
E.g. you can add your team-members to a JIRA-user-group and then construct a simple filter (JQL)
assignee in membersOfGroups("name_of_your_JIRA_user_group")
that would show you all the issues assigned to your team-members (ofcourse you can expand this simple filter with projectkeys, statusses, sprints, etc...).
Also on the ScrumBoards, you can per sprint click the "..." and that will show you the team members in the sprint and their total numbers of storypoints, estimates assigned
