To give you specific instructions, can you please let us know if you are using JIRA Cloud Or server? If it is Server, can you provide us the version you are using?
To create tasks and sub-tasks in most of JIRA Server versions and JIRA Cloud, you just need to perform the following:
1 - Navigate to Projects > Create a new project in your JIRA (If you have already done it, ignore this step)
2 - Click on the + plus icon in the left tab > Select the issue type "Task":
3 - Once the task is created, you can click in the Create subtask Icon to create a sub-task under that task:
