To evaluate productivity, I would like to calculate how long in average our issues were open for, from 1st to last day of each month.
Does anyone know how to do this in JIRA?

You can use Average Time In Status Gadget.
1. Create a filter which selects required issues.
2. Add Average Time In Status Gadget to your dashboard
3. In the gadget settings choose the filter, period - monthly, statuses - open.
You will get the required information.

Sorry I should have been more specific, I know how to create a dashboard and add gadget but I don't find "status gadget" nor Average Time.

I just double checked it. This gadget must be in Jira Core according to the article

Maybe when you pushed Add gadget not all gadgets were loaded.
Choose All category and there will be a button "Load All Gadgets"

I did click on "load all gadget" but can't see Average Time in Status.
I tried "Average Age Chart" and "Resolution Time" and not sure to understand the difference except that for the same period, "Average Age Chart" shows an ADO of 50 days (! quite unlikely) and "Resolution Time" shows an ADO of 2 days (but only focus on resolved issues)
