How to restrict notifications in JIRA

I would like to restrict notification in JIRA on Update event. When only particular custom filed is updated, JIRA not send e-mail. In other cases JIRA send e-mail normally. Is it possible to easilly configurate or I have to write my own listener?

Yes, you will need a listener that capture the changes an throw a custom event if the change is not for your custom field.
