I want to measure Unassigned time： Issue Creation time - Issue Assigned time and Open time： Issue Creation time - Start Progress automatically and record thme into Log Work? Is it possible to do this? If yes, how can we do it?

You can use the add-on Time in Status to track time each and every status and in between transitions. Hope this will help you.
