I need a JIRA filter that returns those issues that were in more than 1 sprint during their life-cycle. 

For example, a user story that was not finished in Sprint 1 and was added in Sprint 2.

 

Is this possible? If yes, how?

You can get/parse the Issue's History. The "WAS" operation in JQL does not support the "Sprint" field.
