How to extract Stories for a specific project on a scheduled basis?

Create a filter for "project = X and issuetype = story" (I'd probably add "and resolution = unresolved")  Then you can subscribe to it, use it in reports and dashboards and so-on.

Your word "extract" doesn't really explain what you want from this though.
