How to define a role in a project?

I have created a role to have read-only access to a project, but I do not see how to define this role!

Can you please help?

The role will become part of your project's permission scheme. Checkout https://confluence.atlassian.com/adminjiraserver073/managing-project-permissions-861253293.html#Managingprojectpermissions-adding_to_permissionAddingusers,groups,orrolestoapermissionscheme

You will have to add the role to "Browse Projects" permission.

There is no "watchers" custom field in JIRA.  People usually have it because they have installed a "watchers field" add-on.

Install one of those and try it again.
