When I create an issue/task, I have assigned the various screens and fields I want to appear. However one field "Affects version/s" I would like to remain as an optional field. However I would only like it to be optional for the project I am working on, can anyone explain how I can change this without it affecting other projects?

You'll need to create a new field configuration and set the field optional in it.
Then create a new field configuration scheme and tell it to use the new field configuration.
Then go to the project admin and choose the new scheme.
(Note - the first two steps are often easier if you copy the existing stuff and amend it)
