I want to do some steps in Jira and i want to ask how?
1-i want the customers to open issues via email to specific project like:
e.g: The customer will send email to "Me@mydomain.com" with his problem then jira will open a ticket automatically in this project only.
2-When the customer sends email with his problem an auto-reply email should be sent to him like:
e.g: Thanks for contacting**** your ticket number is***

I can see that you are using Jira Core but the functionality that you need is provided by Jira Service Desk.
I saw that you created a ticket with our customer advocates and they will give you more details about the product, but I'll share our documentation about requests by email for you to check:

On a service desk project, there is "Customer notification" where you can set a notification for the customer to receive when they create a request.
