Down Grade Insight from 4.2.11 to 4.2.7

How does one downgrade Insight form 4.2.11 to 4.2.7?  The reason we are doing this is because some of our devices are no longer showing up to be picked.

A downgrade might not help (and may just damage your data).  I'd suggest raising a support call with Riada to get their help finding your invisible data.
