Can sub-tasks be on a different sprint from the parent task?

No.

The point of a sub-task is that it is part of the parent task.  So if the parent task is pulled into a sprint, it's nonsense to try to put its parts into another sprint.   If you find yourself wanting to do this, then you need to split up your parent tasks better.
