As an admin, in the list view, I would like to view the Priority Name (High, Med, Low, etc) in addition to the colored arrow. Folks on my team are color blind and cannot tell the difference between the different priority colors

Hi Manu, 

I think the easiest way for you is to change the priority icons! E.g. 1,2,3 or something?

You can locate them on you JIRA server under the $JIRA-APP-DIRECTORY/atlassian-jira/images/icons/priorities/major.png

To be sure: backup your old icons into a seperated folder and place the new icons into that folder.
