Are the issues afterwards still search and accessible?

Yes.  Releasing them simply fills in a field (and that field is excluded by the Kanban board).  The issues are all still there, and fully searchable.  (Unless you set up something to hide them with issue security!)

Once you release an issue, you just have added the "fixVersion" to it, now in order to search them you can write a JQL and use the fixVersion value to search for the released issues.
