Why does the status change to done if I move a story from TODO to Progress?

Go to the board settings and have a look to which status the Progress column is mapped.

Thank you- I have changed it- but how do I change the ones that are currently in progress but strikes out.

You should remove the resolution field value for these issues. Add resolution field to the edit screen. Edit the required issues and then remove the resolution field from the edit screen
