Do you know how to configure Jira to have the same behavior with finished substaks ?
As you can see on the detail view finished subtask are not Strike-though whereas in the view of the current sprint this is the case ...

Jira does not display the strikethrough in some places, usually when there are other indicators that the issue is resolved.
If you're seeing a difference in a place that's showing issues and sub-tasks together, then the strikeout is missing because you're not setting a resolution on the sub-tasks.

It's based on Resolution of the task.
When it's strike off means the ticket is resolved.
It's a default feature. if you don't choose resolution , this may cause some issue while closing sprint.
please go to the issues which are in "done" and non strike. if any reopen transition is there , reopen it or edit sub-task workflow, create a self transition from done to done , and place resolution field on self transition, publish workflow.
then change from done --> done , choose resolution. close it. then remove Done to Done transition.
Note : please select resolution before moving a task to Done.
