I am the manager of a team and it will be very interesting to know all the issues of every project in my dashboard, however, the template for issues by default only shows me my issues.

You can do that.
search by resolution = unResolved in the issue navigator and save the filter by giving it a name and use it in a gadget on a dashboard.
