I want to review what we talked about in a room yesterday. Can I see all of yesterday's messages in that room? Or last week's messages?

Hi Larry,
The ability to review chat history depends on your group’s history retention settings. Some groups retain all history, some retain on a message age basis (7 to 365 days), some store only the last 75 messages, and others retain no history. (See Chat history retention settings.)
If your group retains history, you can access past conversation in three ways:

Also, a bonus: if you're looking for past links or files, look for these icons in the upper right of your chat client:
These give you a list of every file or link shared in a room or 1-to-1 chat, and it saves you from wading through chat messages to find something.
In addition to scrolling up further and further, you have an additional way to parse through HipChat messages. If you Search, you can scroll day by day and use a date picker.

You can also access this screen by going into your HipChat web-interface and selecting Room/History.

It depends on how the group is set up. Not every group using HipChat retains full chat history. See https://confluence.atlassian.com/pages/viewpage.action?pageId=744525822#Chathistory-Chathistoryretentionsettings.
