HipChat Server is not supported by Atlassian?

Why HipChat Server is not mentioned as a supported product in Atlassian's support documentation under https://confluence.atlassian.com/support/supported-platforms-604210551.html ?

HipChat Server is definitely supported by Atlassian. The documentation is just structured differently, that's all.

The documentation you linked to is not about the products supported by Atlassian. It just refers to the supported platforms for individual products.

Yes, as Jobin points out, it's supported, that's just a documentation oversight. I've updated the Supported Platforms page to include the HipChat Server spec page.
