Hello, I would like to know if it is possible to change the status of these objects automatically once I create an incident.
Or does it only change the state of the object that I select since the creation of the issue?

Yes you can change status of existing object.
You can do that with Automation.
Open project where this needed to be implemented, go to automation's, create new,
- trigger "issue created"
- condition "Issue Type = Incident"
- edit Insight Field Attribute, select field then attribute status if its present and just type string that match the value of status you would like to set.
You can then select multiple objects that need's to updated and do the same. This is for the beginning later you can upgrade it once you get a hold of it
