how can we set that the users get email notifications regarding a review? We haven't found any info in the documentation nor in GUI.

Hello,
The FishEye/Crucible logs will tell you that. The logs can be found inside FISHEYE_INST/var/log directory.
You can search in the logs for the sender email account you've configured for FishEye.
