How do I edit UserName for newly created user for JIRA Service desk? It defaults, but we need specific username to match rest of our other applications.

I cannot tell for sure but from "It defaults, but we need specific username" it sounds like the users exist in an external user directory like LDAP and have usernames defined in those directories. If the users are being copied over from Active Directory for example, then the user names would not be able to be edited in Crowd.
Because user names can vary between applications and to accommodate use cases like yours, Crowd has an alias feature that allows the same user to log into different applications with different names. Please check whether this will work for your case: Specifying a User's Aliases
