the anchor option is gone and I want to link a word

which Confluence version are you using, or what do you mean by "new edition"? I can see Anchor macro in both Server and also Cloud versions.

I assume you mean the new editing experience which is being rolled out on Confluence Cloud?
At present there are only linkable headers available as anchors - you can read more about those on this page under the "New and Updated Features" section.
That means the anchor macro that did exist in Classic is not currently available in the new experience - and the suggestion to bring it back has already been closed in relation to linkable headers - see CONFCLOUD-66773.
