Im the admin of the entire confluence, yet my employees open articles / pages and if they dont share it with me i dont see them.. how can i make sure i see everything without asking them to share with me?
Spaces follow the space permission. Therefore even if you are an admin of the Confluence as a whole, if you are not given access through the space permission, you will not be able to see the space directly. However, as Valerie mentioned, you can always gain any access to any space through the admin center by adding yourself to that particular spaces permission.

Yes, just because you are an administrator does not mean that you have unlimited access to all things. But you also will not know what you do not see if they don't let you know. Or you will need to go Space by Space in the Space Permissions to see if you can see them otherwise or who permissions are granted to.

It sounds like you are not enabled to see the Spaces where some of your employees are working.
You can change this in the Admin Center in the 'Security' and then 'Space permissions' section. When you open this page, scroll down to the bottom to find the individual spaces. If your Space Admins aren't using the Default Space Permissions for the Confluence instance, they may have individual Space Permissions configured so only the people working there can see the pages. You can modify this by clicking on the link to 'Manage Permissions' to go into the Spaces and enable yourself.
I would encourage you to try to understand why people aren't using the Default Space Permissions. It's possible to modify the Default Space Permissions to get to a configuration that people are happier to use, then you won't need to do this again, if people create new Spaces from now on using the Default Space Permissions where you as the Product owner have access.
