You can modify the global PDF Stylesheet within Confluence administration. I would suggest searching google and the community posts for how others have exported single page PDFs.

Another solution (paid) you can look into is K15t Software's Scroll PDF Exporter which allows you to adjust the font size with a nice scroll bar. You can also add headers and footers easily.
