When inserting a Jira issue macro to a Confluence page: is it possible to only show the issue ID and not the issue ID and the issue summary?

Yup, that is possible. Simply edit the page, click on the Jira Issue Macro and you should see either one of the options below to select:
This triggers the Jira Issue Macro to show/hide their summary in a page when you view them
