since I asked myself the same, I found at least some kind of a workaround: in the Confluence advanced search (enter the search bar and just hit return) you can filter by content type, and thus also by Whiteboards.
It's not really analytical metrics, but at least you can see the whiteboards created in your instance and maybe find some key users/use cases.
