I create a few tables on a page using the 'Expand' but now that I've been using it it's driving me nuts and I'd like to get rid of it without having to recreate all the tables on my page. is there a way to make it permanently expand it so when users hit the page they don't want to open each table individually?

I'm not aware of a way to permanently expand the macro, but you can copy/paste the tables outside of the macro and then delete the macro.
thanks for the suggestion Rebecca. unfortunately I wasn't able to make it work as Confluence would not let me scroll to select all the rows in my exceptionally large table, but a coworker tried replacing the 'Expand' macro with the 'Info' macro and I've achieved the desired result.
