How do restrict access to your existing content when collaborate with a 3rd party.
Ideally I'd like to create a seperate space.
Same goes for Jira, restricting access to a specific project.
Any suggestion how to do this simply?

which will run you through setting up new projects and Spaces to be only visible to certain groups of users. Following this should allow you to get a good idea of what settings are needed to accomplish this. It's for the same use-case you're describing, allowing a 3rd party access only to a single project.
