How do you restrict access to your content when collaborating with a 3rd party?

How do restrict access to your existing content when collaborate with a 3rd party.

Ideally I'd like to create a seperate space.

Same goes for Jira, restricting access to a specific project.

Any suggestion how to do this simply?

We have a Guide on our Documentation space here - https://confluence.atlassian.com/display/AOD/Managing+project+visibility

which will run you through setting up new projects and Spaces to be only visible to certain groups of users. Following this should allow you to get a good idea of what settings are needed to accomplish this. It's for the same use-case you're describing, allowing a 3rd party access only to a single project.
