I find it hard to believe that simple text fields are not an option in confluence. Is there a way to get this completed?

You may browse Marketplace to find some additional apps that will fulfill your case.
For example, you can try our Handy Macros for Confluence app.
Its Handy Status macro allows you to create predefined set of statuses and switch them (choose any status you want) in the page view mode. And the Handy Date macro allows you and your colleagues to update dates also from the view mode.
Another option would be to embed external services that support data entry. There are plenty of integrations in the marketplace for this kind of work.

In a word, no. Not without some sort of custom solution. It was never how the product was envisioned to work. It is more a wiki, than a data entry platform.

This was necessary because some input types on some browsers don't display icons placed directly after them very well. Making input required.
