I'm currently working on updating confluence pages. However many of the pages I'm working on have drop down menu with information people keep missing. Is their any way to highlight these drop down title so people can't overlook anything.

f you're referring to the Expand macro, unfortunately, it can't be styled. 😕

However, here are a few things you can do:
Personally, I use this macro mostly for advanced details or extra information related to the content, like "Click here to learn more" - something that's supplementary to the main content.

Definitely check the Atlassian Marketplace for your Confluence type (Cloud or Data Center), there are many apps to provide enhanced UI features and functions.
Appanvil/Seibert Media have apps (Mantra, Aura...) that might be able to do that (if you're on Cloud).

Also, you might want to consider Advanced Expand from Content Formatting Macros for Confluence (developed by my team)
Using it you can highlight headers with colours, icons and custom sizes.
Additionally, you can embed it inside tabs
and table cells
