Hello,
I would like to give anonymous access only to one space in our Confluence site. Can I do that without giving the Annonymous access to the whole Confluence site (currently our Confluence site isn't public)

In order to enable anonymous access to a space you have to enable the anonymous access under global permissions, you can then enable anonymous access to individual spaces.
Mikael's thoughts will achieve just what your looking for. Enabling Anonymous Access globally doesn't make any spaces accessible.
A space only becomes accessible when you enable anonymous access for that space.
