Is it possible to render file formats .pdf and .doc in Bitbucket server?

It is not possible to get a view on files of type .doc(x) and .pdf in the Bitbucket viewer.
You will get the message "This file cannot be rendered in your browser." 

Is this something that can be solved? With plugins?

There is indeed an API for this: "bitbucket/feature/files/file-handlers". See https://developer.atlassian.com/bitbucket/server/docs/latest/reference/javascript/bitbucket_feature_files_file-handlers.html for the API documentation and https://bitbucket.org/atlassian/stash-stl-plugin for an example plug-in that renders STL files.

There is only one in the Marketplace, but that one is for Bitbucket cloud. There is one from Atlassian Labs, but you have to build and install it yourself from here: https://bitbucket.org/atlassianlabs/stash-pdf-viewer-plugin
