Nick: So I installed it using the UPM (uploaded the binary you shared). Configured the Tracking ID. I did all this less than 4 hrs ago. I was hoping to see the data in Google Analytics, at least in the real time section. Any idea how long it would take before the data starts showing up??

Ok - I have made some adjustments to the plugin. Specifically not using auto to configure GA, instead using the actual hostname of your Stash instance.
Please try the new version (1.3) at https://bitbucket.org/atlassianlabs/google-analytics-plugin/downloads
This should be a lot more robust.
