How do I access the plan name variable?

When I access bamboo.buildPlanName I get the value in the form "Project - Planname" however I am looking for only the planName, not the projectName prefixed to it. Any ideas?

This seems like a bug, the plan name should only be the value in the field "Plan", that is what it implies. I am not sure why the Project name is also included in that value.

You're right, it's currently not possible to retrieve only the plan name without the project name.
