How can I add a new status for Fix versions?
We have one team that should release the version and another team that should test it after the release.
So I need another status to use after the release (such as "Active" or "Approved").
Note: I'm not talking about the issues related to the version, but to the entire version itself,

Versions do not have a "status" in Jira-speak. Status is an indicator of where an issue is in its process.
So I'm assuming you are looking at the version attributes, which can be unreleased, released, or archived. Those three are there to tell you where the version is, and inform the board. The archived one simply means "can no longer be selected".
There's no way to add different attributes to versions, those three are hard-coded into the version fields.

Yes, Automation has a trigger that picks up "version is updated", and I believe that can catch the change to archived.
