Basically just as above. I can't find any built in way of doing this, is there any kind of plugin etc which I can use to automatically release versions as soon as their release date comes up?

The system does not provide means to do this out of box.
But it would be trivial too write a plugin that uses:
* JIRA Scheduler / Services
* VersionService - https://docs.atlassian.com/jira/latest/com/atlassian/jira/bc/project/version/VersionService.html
To run on a nightly basis, find Versions that "release" today, and move them into release.
//get all projects
// get all versions for project - https://docs.atlassian.com/jira/latest/com/atlassian/jira/bc/project/version/VersionService.html#getVersionsByProject(com.atlassian.crowd.embedded.api.User, com.atlassian.jira.project.Project)
// check status and date isOverdue
// release versions that are unreleased with todays date
