Hello there,
1. Via email I want update the status of an Issue.
Ex: I created issue "id: GS-1 status:Open" when I will send an email in "subject: GS-1 Status: Closed" issues should be closed. If this can happen explain how can it be?
Can someone please have a light on this?

Jira doesn't do this natively. You could try setting up the built-in email handlers to do some basic work with it, combined with the "auto transition listener", but they simply aren't very clever.
However. This plugin IS clever with email: https://marketplace.atlassian.com/plugins/com.javahollic.jira.jemh-ui
JEMH provides this functionality, if you are able to write your desired change into the body of the message and it's configured for the used profile.

Mmm, you should have said you already tried JEMH. As Henning says, it really does support issue updates by email, so maybe you should explain where you are stuck there. (I have this bookmark to remind me of "reopen issue on comment", which does change the status of an issue - https://javahollic.atlassian.net/wiki/display/JEMH/Reopen+an+Issue+On+Comment )

After that, you should be able to send you an email with the first row in the body containing
@workflow=Close
