The following should work:
@Dawid Joshua _TechTime_ I used your solution and it worked - thank you!
The only thing I did differently was use https://domain.atlassian.net/rest/api/3/project/ instead of .../project/search because .../project returned the complete list of projects, whereas .../project/search returned only the first 50 projects by alphabetical order.
Everything else was spot-on though. Thank you again!!

hi, this worked great for pulling up the list of projects. One question, is there anyway to see a time stamp of last used or last time an issue was updated within the project in the results?

Not with one click.
But:
1 is the elegant solution, which should be preferred if this is something that you want export time to time repeatedly. 2 is a manual approach, it doesn't require any scripting skills, but it is more work if you have to do this again and again.

@Karthikeyan_Rajagopal It's not available out of the box. If you don't see the Apps menu, talk to your admin and ask them to install an app that can help you with this, like Better Excel Exporter.

There is not a built-in report for getting the list of projects. You can use a third party app or you can use the Jira REST API to get that information.
