I love that on a more focused singular product/project list you can assign coloring to help break up the visual overwhelm of the jira tickets.
However can you do that for a filtered list that spans multiple products/project? I'm currently not seeing that as an option to format that list, which is really the only style of list myself and my team have found usable in the current configuration of Jira.
I hope this is just user error and I've missed this option along the way.

I believe that the colouring feature that you're referring to is specific to the list view, which is different from the filter view, and (to the best of my knowledge) always limited to the issues of a given project.
This being said, if you're open to solutions from the Atlassian Marketplace, you'll have more options available. I'll add more information below.

If you're open to solutions from the Atlassian Marketplace, you may want to have a look at the app that my team and I are working on: JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a long list of advanced features, including support for conditional formatting. With conditional formatting, you can define conditions on your issues - e.g., based on their project - and if these conditions are fulfilled, set the color of either the entire issue row or a particular cell.
This is how it looks in action:
As every sheet is powered by a JQL query or saved filter, you have full control over which issues and projects you want to include.
I should also add that conditional formatting plays nicely in combination with JXL's many other advanced features, such as e.g. support for configurable issue hierarchies, issue grouping by any issue field(s), or sum-ups.

You would like to use different colours in the JQL for different projects to distinguish between them?
If so, I don't think that will be possible. What is the reason for wanting to do this? To make it easier to read?

Yes 100 percent. I'm asking for the ability to color code different projects to help distinguish between them.
I just got a notification about doing a similar thing on a single project list view (see attached). And it's been a huge work and life improvement. However, because I manage multiple projects I use the JQL filters to collect and organize all my work. This results in a very "beige" list that has no discernable visual separation.
I'm either looking for a solution or asking for this to eventually be a feature.
